Hummingbird Cake


Have you ever tried Hummingbird Cake?   I had it for the first time years ago at a friend's baby shower, and I was hooked immediately.   It's an old Southern Living magazine recipe - apparently one of their most-requested.   I've never made a Southern Living recipe I didn't like.

This cake is so good - kind of like a carrot cake, but with bananas and crushed pineapple, and of course cream cheese frosting.  Moist, cinnamony, and delicious.

Once again, this is a late night camera phone picture, so not the greatest quality.   But you get the idea - lots of pecans and cream cheese goodness.  Yum.
